There are several threads on this already, but below are a few I sent a friend a few years ago

La Tavernaccia - get the suckling pig. Reservation recommended / required
Colline Emiliane - perhaps our best meal. A little dressier / formal. Reservation required
Trapizzino - great fast casual in trastevere
Roscioli - both the restaurant or bakery (great place to get great / quick pizza). Reservation recommended / required for restaurant
Il Goccetto - great wine bar. Get there just before prime time, so you can grab a table.
