Bought a prime brisket at HEB with a sell by date of 4-25. Got it unwrapped and it looks stranger than others I've bought. How can I tell if it's ok?

Went ahead and brought it back. If it smells funny, don't eat it.

Aged beef can have a smell but something with a sell by date that far out shouldn't have an odor. Would not cook and consume that.

Cryovac meat often has a bit of a funk when it comes out of the package, but it'll dissipate pretty quickly

Looks ok, some oxidation present but that should be trimmed off anyway.

I've only had 1 bad one. Smoked it all and everyone had a fine meal, I couldn't eat what I made (although I did) no one got sick. I thought it tasted off and I asked everyone what they thought and they were chowing it down.

So who knows.

I don't see any slime on it, and if it smells fine after sitting a bit out of the Cryo, it'll be fine. The "oxidation" is actually from hot water treatment to kill pathogenic bacteria. It's on the cut exterior, which is subject to a slight burning due to normal treatment to reduce the possibility of bad bacteria. Trim that off, and given no slime or putrid smell, you'll be fine.
