For the Glaze:
1 (17-ounce) jar guava jelly
3/4 cup tequila
1/2 cup fresh lime juice
1 teaspoon lime zest
1/2 cup light brown sugar
1 tablespoon minced ginger
1/2 teaspoon ground cumin
2 teaspoons minced garlic
1/4 teaspoon salt

For the Ribs:
2 tablespoons kosher salt
1 tablespoon paprika
11/2 teaspoons granulated onion powder
1 teaspoon ground black pepper
3/4 teaspoon granulated garlic powder
1/2 teaspoon cayenne pepper
1 teaspoon ground cumin
4 to 5 pounds baby back ribs (2 full slabs, each cut in 1/2)
1/2 cup tequila
2 limes, cut into 6 wedges each


Make the glaze: Put the jelly, 1/2 cup tequila, lime juice, lime zest, brown sugar, ginger, cumin, garlic, and salt in a 6-quart pot over medium-high heat. Bring to a boil, stirring often to dissolve the sugar. Once the mixture has come to a boil, reduce the heat to medium, and allow the mixture to reduce to a glaze consistency, about 25 to 30 minutes longer. Strain through a fine-mesh sieve and discard the solids. Stir in the remaining 1/4 cup tequila and reserve.


For the ribs: In a small bowl, combine the kosher salt, paprika, onion powder, black pepper, garlic powder, cayenne, and ground cumin. Put the ribs on a large rimmed baking sheet. Rub the spices into the meat on both sides. Cover lightly with plastic wrap and allow the ribs to sit, undisturbed, for at least 20 to 30 minutes. (Ribs can sit up to overnight, but should be refrigerated.)

Remove the plastic wrap and pour the tequila into the sheet pan. Wrap the pan tightly with aluminum foil. Put the ribs on the grill and smoke/bake until they are fork-tender. When they're just about done, periodically add a bit of the glaze.

Remove the ribs from the oven and lay them on a cutting board, meaty side down. Using a sharp knife, cut between the ribs. Serve the ribs with the lime wedges.

Dynastar97 Fried Boudin Balls

Open links of Boudin casings, squeeze out the boudin sausage. Form into balls bout the size of a golf ball. Roll in a mixture of flour, bread crumbs, salt and pepper, and Tony's if you like. Drop into hot oil (375 degrees) and fry until golden brown. Serve hot, with cold beer.

Chicken Enchilada Dip

1 large can chicken breast (drained (or use left overs))
1 small can of green chilis
8 oz grated cheddar cheese
8 oz cream cheese
1/2 cup sour cream
1/2 cup mayo
as many jalapeños you want to taste (pour some juice in there too)


Mix it as well as you can. Pretend you dont know the ingredients. Bake at 350 until melted and mix it better. Then bake until brown and bubbly.






Wing Sauce Dip

2 8oz packages of cream cheese
3 large cooked and shredded chicken breasts
1 ranch seasoning package
as much wing sauce as you want to taste ( I prefer Frank's)
1 package of mexican spice mix shredded cheese

Mix and bake at 375 until bubbly and just very slightly brown.

Chicken jalapeno wraps made easier

I have done this a few times. Its much easier than trying to get the cream cheese in a jalapeno. So when making a few dozen it saves time.

Tenderize chicken breast flat and cut into strips 1.5 to 2 inches wide

Split jalapeno in half

Big ole helping of cream cheese in middle of chicken

Stick jap on top of cream cheese

Roll chicken around jalapeno

wrap bacon around chicken

stick tooth pics in to keep everything in place

Wings

Season wings with Tony C's

Grill wings. When wings are done toss in bowl with Texas Pete's Wing Sauce. Very Easy, Very Good.

Baked Potato Dip
(adjust all amounts to taste!)

1 16oz tub of sour cream
bacon bits
cheddar cheese
chopped green onions
package of reduced-sodium ranch dressing mix (get the reduced sodium or it is VERY salty!!!!)

marrinated sandwiches

I know that doesn't make sense but just hang with me on this one.

2 Pk Hawaiian Rolls
Shaved deli ham
swiss cheese
1-stick melted butter
1/2 tsp dry mustard
1/2 tsp poppy or sesame seeds
2 tbsp dried minced onions
1 tbsp Worcestershire sauce

slice rolls horizontally
place bottom halves in 9x13 pan
top each piece with ham,cheese, and remaing 1/2 of roll
mix all other ingredients and pour over pan
cover with foil and chill overnight
Bake at 350 for 15 min w/ FOIL ON
REMOVE FOIL and bake for 15 min more

supposed to be served warm but i take them skiing and they are still great damn near frozen soild.

Would meatballs count as appetizers or tailgate food? I make some fabtastic meatballs that are great to just eat by themselves.

For big boar that "you can't eat":

Cut the backstraps out. Clean off all of the sinew/fascia etc.

Slice it into chunks roughly the size of a bite sized snickers bar. Let that marinade overnight in Allegro Sauce Marinade.

Wrap each chunk in bacon/toothpick etc.

Grill it.

No one, will be able to tell that it was an old rank boar.

I really think an Outdoor Board cookbook is a great idea! I'd buy it
